Roasted Sweet Potato Slices


  • 4 Tbsp olive oil

  • Black pepper to taste

  • 2 lbs sweet potatoes, scrubbed, left unpeeled, cut into 1/8-inch thick slices


  1. In a small bowl, whisk together the olive oil and pepper to taste.

  2. Arrange the sweet potato slices, not touching, in rows on parchment paper in a sheet pan and brush with the olive oil mixture.

  3. Roast the slices in a 450* F. oven, turning them once with a spatula, for 18-22 minutes, or until they are golden and crisp.

  4. Transfer the slices to a plate and serve warm.
